Temperature assumed correct until the smell said otherwise

Chilled stock represents most of a meat business's capital, and it is protected by equipment nobody is monitoring.

A meat retailer's stock is entirely dependent on refrigeration continuing to work between one visit and the next.

Overnight is the exposure

A failure at nine in the evening is discovered at seven the next morning. Ten hours is enough to lose everything in the unit, and nothing recorded the interval.

What is out of scope here

Your storage temperatures and food safety obligations are set by regulation and your own procedures. A record makes a failure visible and its scope demonstrable; it does not establish the requirement.

What changes

  • Temperature recorded at defined intervals with time and unit
  • Failures identified while stock is still recoverable
  • Stock affected by an excursion identifiable
  • Equipment history retained to predict failure
